Curried Lentil Stew Recipe
Enjoy this home cooking demo- a gluten-free, dairy-free, nightshade-free Curried Lentil Stew! It’s perfect for Fall and packed with protein and nutrients. Simmer it slowly on the stove and enjoy the curry aroma. You can make it with meat or vegan.
I have Hashimotos auto-immune condition and I manage my symptoms with a whole foods, homemade diet that is mostly paleo, with some additional removals such as nightshades. It helps me stay symptom-free so I can enjoy stable energy levels and overall health. I love to shop at farmers markets and grow my own food whenever possible.

Curried Lentil Stew Gluten free, Dairy Free, Nightshade free
- One apple, chopped
- One carrot, chopped
- One sweet potato, chopped
- handful of fresh parsley
- I carton or 32 oz. Bone broth or veggie broth
- One cup rinsed lentils
- 1 heaping tsp Nightshade-free curry powder
- 1/2 can coconut milk (or more to taste)
- Salt and pepper
- 2 tsp Coconut aminos (optional)
Assemble in the pot and simmer for 30 minutes.
